Context

This line is written by Luke in Luke 15:23-24.

This is a line from the parable of the Prodigal Son, which is pretty popular as far as parables go. After the Prodigal Son returns (a.k.a. the one who disappeared for a hot second and spent all his dad's money), his dad is so happy that he tells his servants to throw a huge party. And we all know that it's not a real party unless someone has killed the fatted calf.

Where you've heard it

"Kill the fatted calf" is New Testament slang for celebrate good times, come on. You've probably heard it in everyday conversation with your Biblical party animal friends.
