We don't actually find out much about Mr. Hatter since he passes away ten paragraphs into the novel, except that he is deeply proud of his three daughters and sending them to an expensive school leaves his shop in heavy debt when he passes away. At the time of Mr. Hatter's sudden death, only Sophie has actually officially finished school. Lettie and Martha have to leave to start up their apprenticeships as soon as Fanny realizes that she can't afford to keep educating them like this.
