Linus

Linus starts out as the antagonist; he's the sneak who is trying to keep Sabrina and David apart. And he's successful: ye olde champagne glasses in the back pocket trick never fails.

But then he morphs from antagonist into love interest: poof. This is a Cinderella story, after all, so you get these transformations. Sabrina goes from waif to French fashion goddess, and Linus goes from heartless to having more heart than the Tin Man on Valentine's Day.
